STRAWBERRY SOUR CREAM POUND CAKE CUPCAKES

Ingredients
  • CUPCAKE INGREDIENTS:
  • ½ cup unsalted butter – room temp
  • 4 ounces cream cheese – room temp
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 cups of sugar
  • 3 cups of all purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • A sprinkle of salt

  • STRAWBERRY CREAM CHEESE ICING INGREDIENTS:
  • ¼ cup unsalted butter – room temp
  • 8 ounces cream cheese – room temp
  • 2 cups of confectioners sugar
  • ¼ cup dried strawberries
  • ¼ cup fresh strawberries
  • ¼ tsp salt
Cooking instructions
  1. Preheat the oven to 350 degree
  2. Line muffin tray with cupcake liners
  3. Cream the cream cheese and butter until smooth
  4. Add sugar and beat until fluffy
  5. Add eggs one at a time, then add vanilla
  6. In a separate bowl, add all the dry ingredients (flour, salt, baking soda and baking powder)
  7. Slowly add in the flour and the sour cream a little at a time
  8. Fill liners 2/3 full
  9. Bake for 21 minutes
