Eggnog Tres Leches and Slane Irish Whiskey Drunken Berries

  • Tres Leches Milk Blend Ingredients:
  • 16 oz Shamrock Farms® Eggnog
  • 14 oz condensed milk
  • 12 oz evaporated milk
  • White Cake Ingredients:
  • 8 whole eggs
  • 2 egg whites
  • ¼ cup water
  • 2 cups granulated white sugar
  • ¼ cup EVOO
  • 1 ½ cup cake flour, sifted
  • Slane Irish Whiskey Drunken Berries Ingredients:
  • 2 tbsp Slane Irish Whiskey®
  • 2 cups mixed berries
  • 2 tbsp granulated sugar
  • 2 tsp fresh lemon juice
  • ½ tsp salt
  • Whipped Cream Ingredients:
  • 2 cups Shamrock Farms® Heavy Whipping Cream
  • 2/3 cup sugar
  • 1 tbsp vanilla extract
  • ½ tsp Maldon Sea Salt
Cooking instructions
  1. Tres Leches Milk Blend Instructions: Combine all ingredients and mix with a wire whisk.
  2. Hold in refrigerator.
  3. White Cake Instructions: Preheat oven to 325 degrees.
  4. Lightly spray vegetable oil inside a medium sized baking dish (9” x 13”).
  5. Place eggs and water in mixer with whip attachment on medium speed.
  6. While on medium speed, slowly steam in sugar and whip for 12 minutes.
  7. Turn speed up to medium high and slowly stream in olive oil.
  8. Turn off the mixer, add flour and turn mixer back on at low speed until flour has been completely incorporated.
  9. Pour cake batter in baking dish.
  10. Bake in oven for 35 minutes or until toothpick comes out dry.
  11. Remove from oven and allow the white cake to cool at room temperature.
  12. Using a thick pick, pierce 75-100 holes evenly throughout the cake.
  13. Evenly pour the tres leches milk blend over the cake and allow to absorb in a refrigerator for minimum 2 hours, maximum 6 hours.
  14. For service, cut into 9 or 12 equal rectangles and plate.
  15. Whipped Cream Topping Instructions: Add cold Shamrock Farms Heavy Whipping Cream, sugar and vanilla extract to kitchen aide using the wire whisk attachment.
  16. Whip on medium high until cream holds high peaks.
  17. Dollop generously over tres leches cake.
  18. Garnish with a pinch of maldon sea salt.
  19. Drunken Berries Instructions: Mix berries with sugar, Slane Irish Whiskey, lemon juice and salt. Allow to stand for 20 minutes, stirring occasionally. Great trick if your fruit is under-ripe.
  20. Serve over Whipped Cream Topping.
