CREAMY RICOTTA WITH MAPLE GLAZED CRANBERRY AND CARROTS

  1. Ricotta Cooking Instructions: In a stainless-steel pot, pour milk and heavy cream together and heat over medium and stir constantly.
  2. Once the milk mix is steaming (starting to simmer) add lemon juice. Wait 3-5 minutes, stir gently as the mix separates the curd and whey.
  3. Once separated, strain through cheesecloth and let it sit straining for about 1 hour or more.
  4. Once strained, mix with half and half creamer to obtain the right consistency.
  5. Season with salt and lemon.
  6. Cranberries and Carrots Cooking Instructions: Preheat the oven to 350 degrees Fahrenheit.
  7. Place the carrots and cranberry and other ingredients (not the ricotta) in an oven-resistant container.
  8. Every 5 minutes stir the mix with a spoon to prevent burn edges on the vegetables.
  9. Cook for 30-35 minutes.
  10. Serve with ricotta by spooning the mixture over the top.
