Cottage Cheese Cobb Salad

  • 3-4 cups chopped romaine lettuce (about 1 small head)
  • 1/2 cup Shamrock Farms Cottage Cheese
  • ¼ cup freeze dried corn
  • ¼ cup chopped tomatoes (seeds removed)
  • ¼ cup chopped cooked bacon
  • 2 large hard-boiled eggs chopped
  • ¼ cup cubed ripe avocado
  • 2 TBSP sunflower kernels
  • 2 TBSP crumbled blue cheese
  • Salt & Pepper
Cooking instructions
  1. Place lettuce in a bowl or serving tray.
  2. Arrange cottage cheese, corn, tomatoes, bacon, eggs, avocado, sunflower kernels, and blue cheese on top of lettuce.
  3. Right before eating, mix all ingredients together well and top with salt and pepper to taste.
  4. No dressing is needed since the cottage cheese and avocado give enough creaminess to combine all the flavors together!
  5. Tip: You can add more cottage cheese or a bit of olive oil & vinegar if a wetter consistency is desired.
