Easy Egg Casserole

  • 3/4 cup Shamrock Farms Milk
  • 1 cup lean ham, cubed
  • 1 cup frozen seasoned potatoes (with onions and peppers)
  • 3/4 cup frozen spinach, chopped
  • 1/2 cup lowfat cheddar or Swiss cheese, shredded
  • 6 eggs
Cooking instructions
  1. Preheat oven to 375°F.
  2. Lightly coat an 8×8 casserole dish with nonstick spray.
  3. Arrange the ham, potatoes, spinach, and cheese in the bottom of the casserole dish.
  4. Beat the eggs and 3/4 cup milk together in a large bowl and pour over the ingredients in the casserole dish.
  5. Bake 25 to 30 minutes or until lightly browned and puffed.
  6. Serve immediately with remaining 8-ounce glass of milk.
