• 1 egg
  • 1 cup buckwheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • ¾ cup Shamrock Farms® Original Sour Cream
  • 1 old ripe banana
  • 2 tablespoons melted butter
Cooking instructions
  1. Whip the egg until frothy in a bowl.
  2. Using a whisk, combine dry ingredients (flour, baking powder, baking soda and salt) in a separate bowl.
  3. Using a blender or food processor, mix the banana and sour cream until smooth.
  4. Mix the banana and sour cream mixture with the egg and melted butter.
  5. Then, whisk the wet ingredients into the dried ingredients until just combined, being mindful not to overmix.
  6. Let the batter rest for 10 minutes or so.
  7. On a well-greased griddle or pan make the pancakes, flipping when they present air bubbles on the first side.
  8. Serve with toasted walnuts, sliced banana, butter and maple syrup.
