SPINACH CASSEROLE

Ingredients
  • 4 TBSP butter
  • 1 small yellow onion chopped fine
  • 3 cloves garlic minced
  • 1 ¼ cup Shamrock Farms cottage cheese
  • ⅛ tsp cayenne
  • ¼ tsp allspice
  • 20 oz frozen chopped spinach thawed and squeezed dry
  • ¾ cup parmesan cheese divided
  • 2 oz cream cheese softened
  • Salt & pepper to taste
Cooking instructions
  1. Preheat oven to 400F
  2. Grease a 1 ½ - 2 qt casserole dish and set aside
  3. Melt butter in a saucepan over medium heat.
  4. Add garlic and onion, stir occasionally until softened.
  5. Mix in cottage cheese, cayenne, allspice, salt & pepper.
  6. Stir in spinach and ½ cup parmesan cheese.
  7. Add cream cheese and slowly mix until melted and combined.
  8. Transfer spinach mixture to casserole dish
  9. Sprinkle top with remaining ¼ cup parmesan
  10. Bake uncovered until hot, bubbly, and just started to get golden on top (about 15 minutes)
