Creamy Broccoli Bake

  • 8-10 cup fresh broccoli florets
  • 5 tablespoons butter, divided
  • 1/2 medium sweet onion, chopped
  • 1 1/2 cup milk
  • 1 1/2 cup Shamrock Farms Heavy Whipping Cream
  • 2 tablespoons all-purpose flour
  • 3-4 cup shredded monterey jack cheese
  • 3/4 cup shredded Parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 2 eggs beaten
Cooking instructions
  1. Preheat oven to 325. Lightly grease a 9×13 baking dish.
  2. Wash and cut your fresh broccoli into bite-sized florets. Place in microwave safe dish with a small amount of water and microwave for 2-5 minutes (just until tender crisp). Drain well and place into the baking dish.
  3. In small saucepan, melt butter approx 2 tablespoons butter. Add chopped onion and cook over medium heat until slightly brown. Add remaining butter, melt, and whisk in the flour, salt, pepper, and nutmeg until smooth. Continue whisking while gradually adding in milk and heavy cream. Slowly bring to a boil, stirring until slightly thickened.
  4. Remove from heat, stir in cheeses until melted. Quickly stir in beaten eggs until well-combined and pour sauce over broccoli.
  5. Bake for approximately 30 minutes until bubbly. For a little extra browning or crispness, you can place it under the broiler for the last 2 -3 minutes.
