Shamrock Farms® Irish Whiskey Eggnog Creamed Spinach

Ingredients
  • 2 large bags of Fresh Spinach, around 1 lb.
  • 1/4 White Onion, diced small
  • 1 tbsp Butter
  • 1/2 cup Shamrock Farms® Irish Whiskey Eggnog
  • 3/4 cup Shamrock Farms® Heavy Whipping Cream
  • 1/2 cup Pecorino Romano Cheese, grated
  • Freshly grated Nutmeg, a small grating
  • Salt and Black Pepper to taste
Cooking instructions
  1. Using a food processor, pulse the spinach until all of it is very finely chopped
  2. Cook onion in a casserole or sided pan with butter for 2 minutes on medium heat
  3. Add Shamrock Farms® Irish Whiskey Eggnog and heavy whipping cream
    NOTE: if you want spinach on the sweet side, you can omit heavy whipping cream
  4. Reduce the Eggnog and heavy whipping cream mixture for 2 minutes, whisking gently, the mixture should decrease slightly in volume and thicken
  5. Add all spinach to eggnog and cream mixture, stir and cook for 3-5 more minutes on medium heat until it looks nice and thick
  6. Stir in grated nutmeg, salt, black pepper, and half of Pecorino Romano cheese before plating in a bowl
  7. Garnish the creamed spinach with the remaining cheese and freshly grated nutmeg
