• 18-20 Large Cannoli Shells (homemade or store-bought)
  • 1 cup Shamrock Farms Heavy Whipping Cream
  • 30oz Ricotta Cheese (strained if very wet/dripping)
  • ¾ cup powdered sugar
  • 1 tsp peppermint extract
  • Chocolate melting wafers
  • Crushed peppermint candy
Cooking instructions
  1. Whip Shamrock Farms Heavy Whipping Cream until stiff peaks form. Set aside.
  2. In another larger bowl, mix ricotta cheese, powdered sugar, and peppermint extract just until smooth.
  3. Fold the whipped cream into the ricotta cheese mixture.
  4. Place in the refrigerator for at least 1 hour.
  5. Meanwhile, melt chocolate in a double boiler or in the microwave at 10-second intervals stirring in between.
  6. Dip edges of cannoli shells in chocolate. Roll in peppermint candy if desired.
  7. Place shells in the refrigerator until chocolate has hardened.
  8. When ready, pipe cream mixture into the cannoli shells.
  9. Sprinkle powdered sugar over the top when ready to serve.
