Grandma’s Peach (or Rhubarb) Pie

  • 1/2 cup Shamrock Farms Sour Cream
  • 1/2 cup Shamrock Farms lowfat Cottage Cheese
  • 2 cup sliced fresh peaches (or rhubarb)
  • 1/4 cup flour
  • 1 cup sugar
  • 2 egg yolks, slightly beaten
  • 1 9" pie shell (if desired, a lattice-top crust can also be added to top of pie)
Cooking instructions
  1. Mix sugar, flour, and fruit; pour into pie shell; spread evenly.
  2. Mix eggs, Shamrock Farms Cottage Cheese, and Shamrock, Farms Sour Cream; pour over fruit mixture and spread evenly. If using peaches, sprinkle peaches with cinnamon. If using a lattice-top crust, add to top of pie.
  3. Bake at 350 degrees F for approximately 45–50 minutes, or until inserting a knife into the custard comes out clean.
  4. Note: 1/2 pint Shamrock Farms Whipping Cream may be substituted for Shamrock Farms Cottage Cheese and Shamrock Farms Sour Cream.
