Cottage Mousse

  • 2 cups Shamrock Farms Low Fat Cottage Cheese
  • 1 cup boiling water
  • 3 oz strawberry gelatin (or fruit flavor of choice)
  • 4 - 6 medium strawberries quartered (or similar amount of preferred fruit to complement gelatin flavor)
Cooking instructions
  1. Mix boiling cup of water with 3-oz gelatin. Stir until dissolved and set aside.
  2. In blender, combine cottage cheese and fresh strawberries. Blend until smooth and creamy.
  3. Slowly add lukewarm gelatin to cottage cheese mixture, blending thoroughly.
  4. Pour mixture into individual serving cups and place in fridge to firm – at least 2 hours.
  5. Garnish with fresh strawberries (or other fruit) as desired.
