Cottage Cheese Breakfast Pizza

Ingredients
  • ½ cup Shamrock Farms Cottage Cheese
  • 3 tablespoons extra olive oil, divided
  • 6 slices of bacon
  • 2 cups shredded mozzarella cheese
  • ½ cup Parmesan cheese, grated
  • ¼ teaspoon dried oregano
  • Salt and pepper
  • Pinch of cayenne pepper
  • 1 pound store bought pizza dough
  • 6 large eggs
  • 2 scallions sliced thin
  • 2 tablespoons minced fresh chives
Cooking instructions
  1. Preheat oven to 500°.
  2. Grease sheet pan with 1 tablespoon oil.
  3. Cook & crumble bacon.
  4. Combine mozzarella & parmesan in bowl, set aside.
  5. Combine cottage cheese, oregano, ¼ tsp black pepper, cayenne pepper, & 1 tablespoon oil, set aside.
  6. Press and roll dough into 15×11 rectangle on floured counter. Transfer and press dough to edges of pan and brush edge with remaining 1 tablespoon oil.
  7. Pre-bake dough 5 minutes; remove from oven.
  8. Spread cottage mixture evenly over top, leaving 1” border around edges.
  9. Sprinkle bacon over cottage cheese mixture.
  10. Sprinkle mozzarella mixture over pizza.
  11. In cheese mixture, make 2 rows of 3 small wells, ~3 inches across.
  12. Crack 1 egg into each well, add salt & pepper.
  13. Return to oven & bake 9 to 10 minutes for slightly runny yolk, longer if you want eggs firmer.
  14. Cool slightly and sprinkle with green onions and chives.
