Cheesy Smoky Mac & Cheese

Ingredients
  • Simple Cream Bechamel Sauce Ingredients:
  • 5 Tablespoons Unsalted Butter
  • 5 Tablespoons of All-Purpose Flour
  • 1 Cup Shamrock Farms® Milk (Whole or 2%)
  • 1 Cup Shamrock Farms® Heavy Cream
  • 1/4 Teaspoon of Ground Nutmeg, (or to taste)
  • 1/4 Teaspoon of Salt, (or to taste)
  • 1/4 Teaspoon Black Pepper
  • Pico de Gallo Ingredients:
  • 2 each Roma Tomatoes Chopped
  • ½ each Diced White Onion
  • ½ each Diced Serrano
  • ¼ Bunch Chopped Cilantro
  • TT Salt
  • Assemble:
  • 8oz Bechamel
  • 8oz Cooked Pasta
  • 1oz Pureed Chipotle
  • 2oz Chihuahua Cheese
  • 2oz Pico de Gallo
  • 1oz Shamrock Farms® Sour Cream
  • TT Salt
Cooking instructions
  1. Bechamel Sauce Instructions:
    In a large sauce pan or small stock pot melt butter on low heat.
  2. Add flour to melted butter and let cook for about 1 minute.
  3. To cooked flour mixture, add milk, cream, nutmeg, salt, and pepper.
  4. Let simmer on medium heat for 10 to 15 minutes while stirring.
  5. When sauce reaches desired thickness, remove from heat.
  6. Pico de Gallo Instructions:
    Combine all ingredients and set aside for 30 minutes.
  7. Assembly Instructions:
    Pre-heat saucepan.
  8. Add bechamel and pureed chipotle and stir together.
  9. Once mixture in hot add cheese and pico de gallo.
  10. Once cheese is melted add pasta and heat.
  11. After mixture is hot, stir in sour cream and adjust seasoning.
  12. Serve hot and enjoy.
