Banana Chocolate Chip Protein Pancakes

  • 1 bottle Shamrock Farms® Rockin’ Protein Builder - any flavor!
  • 1 ½ cup flour (regular all-purpose or all-purpose gluten-free)
  • 3 ½ tsp baking powder
  • ¾ tsp salt
  • 1 large egg
  • 3 tbsp melted butter or oil of your choice
  • ¼ cup mini semi-sweet chocolate chips + extra for topping
  • 1-2 sliced bananas
Cooking instructions
  1. Blend together flour, baking powder and salt in a mixing bowl
  2. Add Shamrock Farms® Rockin’ Protein Builder, egg and butter and mix well with a fork or whisk
  3. Heat up a non-stick pan or griddle over medium heat
  4. When hot, spray with a bit of cooking spray and add about ¼ of mix per pancake to the pan
  5. Sprinkle a generous teaspoon of chocolate chips over the top and pat down if you’d like
  6. After a minute or so, flip the pancake and cook until done (these can get pretty puffy, so if you need to press down a bit you can)
  7. When done, move to a plate and continue with the rest of the mix
  8. Top with sliced bananas and extra chocolate chips if desired
  9. Optional: add maple syrup, whipped cream or other fruit as toppings
