4 lb Yukon gold potatoes, peeled and cut into even pieces
1 cup unsalted butter
1½ cups Shamrock Farms Heavy Whipping Cream
1 cup Shamrock Farms Natural Sour Cream
2 tsp kosher salt, plus more for cooking water
½ tsp white pepper
¼ tsp freshly grated nutmeg
Cooking instructions
Caramelize the Onions:
Melt butter with olive oil in a large sauté pan over medium-low heat. Add onions and salt. Cook slowly for 30-40 minutes, stirring regularly, until the onions are very soft and deeply golden brown. Don't rush this step; the deep caramelization is what gives the potatoes their savory sweetness. Take time to scrape the bottom of the pan and pick up char to mix into the onion. Add thyme and sherry vinegar. Cook another 1-2 minutes. Remove from heat and roughly chop caramelized onions
Boil Potatoes:
Place potatoes in a large pot and cover with cold, salted water. Bring to a simmer and cook for 15-20 minutes, or until completely tender. Meanwhile, heat the butter and 1 cup Shamrock Farms Heavy Whipping Cream together until the butter is melted and the mixture is hot. Drain the potatoes thoroughly then return them to the hot pot for 1-2 minutes over low heat to evaporate excess moisture.
Mash Potatoes:
Pass the potatoes through a ricer or mash with a handheld masher while hot. Gently fold in the warm butter-cream mixture. Fold in the Shamrock Farms Natural Sour Cream, salt, white pepper and nutmeg. Add additional warm cream as necessary to achieve a smooth, luxurious consistency.
Fold about ¾ of the caramelized onions into the potatoes, reserving the remainder for garnish.
Final Steps:
Spoon the mashed potatoes into a warm serving dish. Create a shallow well in the center and finish with the reserved caramelized onions. Top with a little melted butter, fresh thyme, cracked black pepper, and flaky sea salt.
