Soaked Irish Whiskey Eggnog Cake

Ingredients
  • Cake Batter*
  •                1 cup unsalted butter
  •                2 cups granulated sugar
  •                5 eggs
  •                2 tsp vanilla extract
  •                2 cups all purpose flour
  •                1 tsp baking soda
  •                1 cup Shamrock Farms Irish Whiskey Eggnog
  •                3oz Irish whiskey
  •                *For quicker prep: substitute with store-bought angel food cake
  • Shamrock Farms Cardamon Cream Cheese Frosting
  •                1 cup unsalted butter
  •                1 cup cream cheese
  •                2 cups granulated sugar
  •                1 tsbp vanilla extract
  •                ½ tsp ground cardamon
  • Soak & Garnish
  •                1 cup Shamrock Farms Irish Whiskey Eggnog 
  •                1 cup candied walnuts
Cooking instructions
  1. Pre heat oven to 350 degrees
  2. Using an electric mixer beat butter and sugar for 3-4 minutes
  3. Separate egg yolks from egg whites, then add one yolk at a time and mix until well blended
  4. Add vanilla extract and beat until combined
  5. Sift together flour and baking soda in a separate bowl
  6. Add half of the flour mixture to the whipped butter and mix on medium speed until combined
  7. Add half of Shamrock Farms Irish Whiskey Eggnog and Irish Whiskey then mix on medium speed until combined
  8. Repeat steps 6 then 7 using remainder of flour mixture then Shamrock Farms Irish Whiskey Eggnog and Irish Whiskey
  9. In a separate bowl, using an electric mixer beat eggs whites until stiff speaks form
  10. Fold egg whites into cake batter with rubber spatula until combined
  11. In a greased 9” spring form pan add batter until slightly below the top of the pan
  12. Bake 40-45 minutes or until a wooden pick inserted in center of cake comes out clean with no batter
  13. Remove from oven and cool for 10 minutes then sperate from spring form pan
  14. Once cake has been removed completely, poke cake with 100 holes from a wooden pick
  15. Slowly drizzle 1 cup of Shamrock Farms Irish Whiskey Eggnog onto cake and allow cake to absorb all the liquor
  16. To make Shamrock Farms Cardamon Cream Cheese Frosting use an electric mixer and whisk all ingredients until smooth
  17. Using an icing spatula, evenly coat the entire cake with the frosting and garnish with crumbled candied walnuts
