Protein Pancakes

  • 1 cup Shamrock Farms Cottage Cheese
  • 3 eggs
  • 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons canola oil
  • 1/4 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • Blueberry syrup, butter, maple syrup, and fruits are optional for toppings.
Cooking instructions
  1. Preheat a pan or griddle to medium heat. (For our gas stove, the griddle was quick to heat up at low-medium.)
  2. In a mixing bowl, beat together eggs, Shamrock Farms Cottage Cheese, sugar, and vanilla extract.
  3. Add in flour and baking powder, and whisk to combine.
  4. Slowly whisk in canola oil. If consistency is too runny, slowly whisk in flour in small increments.
  5. Use 1/3 cup as a measuring cup to scoop out batter and pour onto heated pan. Allow pancake to cook until batter looks raised and is bubbling. Flip and allow other side to quickly cook until golden.
