Herb Garden Cottage Cheese Crostini

  • 1 baguette, sliced into 12 - 16 slices
  • 2 Tbs olive oil
  • 1 cup cottage cheese
  • 1/4 cup prepared pesto
  • 1/4 cup grated parmesan cheese
  • 1/4 cup pistachios, chopped
  • 1/4 cup fresh herbs or microgreens
Cooking instructions
  1. Preheat the oven to 450F and brush both sides of the baguette slices with the olive oil and place on a metal cooling rack and place it in the oven for 5 minutes to toast the tops.
  2. Then flip the bread to toast the other sides. Once toasted, remove from the oven and set aside.
  3. Combine the cottage cheese, pesto, and parmesan cheese in a mixing bowl and stir until combined.
  4. Scoop a generous amount of the cream cheese mixture onto each of the crostini and then top with fresh herbs and chopped pistachios.
  5. Serve immediately because the bread will start to soften if prepared too far in advance.
