1 1/2 cups frozen mixed berries (or berries of your choice)
1 1/4 cups milk
2 eggs, beaten
1/4 cup maple syrup
2 teaspoons vanilla
Preheat the oven to 375° F, and spray a casserole dish with nonstick spray (I used coconut oil spray).
Mix dry ingredients in large mixing bowl.
Add in frozen berries and wet ingredients, and combine well.
Pour mixture into the baking dish, and spread evenly.
Cover tightly with foil and bake for 30 minutes.
Remove foil and bake for another 15 minutes or until the top is as browned as you like.
Serve with a dollop of cottage cheese, milk, fresh berries, and maple syrup, honey, or brown sugar if you need a little extra sweetness.
