  • 1 ounce Shamrock Farms Heavy Cream Sauce
  • 2 ounces spinach and Shamrock Farms Heavy Cream Soup
  • 1/2 ounce Shamrock Farms Heavy Cream Froth
  • 1/2 ounce creamy Shamrock Farms Heavy Cream Red Wine Vinaigrette
  • 1/4 cup sautéed spinach
  • 1 each butternut ravioli
  • 2 teaspoons toasted hazelnuts
  • 1 teaspoon basil oil
  • 1 each chive
  • 1/2 cup spinach and fennel salad
  • 2 teaspoons gorgonzola crumbles

SPINACH AND BUTTERNUT SQUASH RAVIOLI
WITH SHAMROCK FARMS HEAVY CREAM SAUCE
PASTA DOUGH

Ingredients:
3/4 teaspoon salt
1 1/4 cups flour
1/2 cup Semolina
3 each eggs
Water, if needed

Directions:
Mix well and chill before rolling out.

RAVIOLI FILLING

Ingredients:
1 tablespoon butternut squash, halved and seeded
1 tablespoon brown sugar
1 pinch ground cinnamon
1 tablespoon maple syrup
1 tablespoon Shamrock Farms Butter
1 ounce Shamrock Farms Heavy Cream
5 ounces ricotta cheese
2 tablespoons Parmesan, grated
2 tablespoons parsley, chopped
1 pinch of chopped thyme

Directions:
Place squash cut side up on a sheet pan. Sprinkle with brown sugar and cinnamon, season with salt and pepper. Drizzle with syrup, dot with butter. Pour water onto sheet pan. Bake until squash is tender, about 1 hour at 350 degrees F.

Scoop out squash into a bowl. Mix in Shamrock Farms Heavy Cream, ricotta, Parmesan, parsley and thyme. Season with salt and pepper.

Roll out dough, fill and top with pasta dough. Cook in boiling water 2 minutes. Reduce 1/2 cup Shamrock Farms Heavy Cream with salt, pepper and shallots. Add ravioli to sauce and hold until plating.

SPINACH AND FENNEL SALAD WITH SHAMROCK FARMS
HEAVY CREAMY RED WINE VINAIGRETTE

Ingredients:
4 cups spinach and fennel salad
16 tablespoons gorgonzola cheese
4 ounces dressing

RED WINE VINAIGRETTE

Ingredients:
2 ounces red wine vinegar
1 ounce red wine
1 teaspoon sugar
1 teaspoon shallots
2 ounces Dijon mustard
1 ounce Shamrock Farms Heavy Cream
4 ounces virgin olive oil
Pinch chopped oregano
Pinch chopped parsley
Pinch chopped garlic
Salt and pepper to taste

Directions:
Mix Shamrock Farms Heavy Cream, vinegar, wine, sugar, shallots and mustard. Drizzle in oil, add oregano, parsley, garlic and season.

SPINACH AND SHAMROCK FARMS
HEAVY CREAM SOUP SIP

Ingredients:
1 tablespoon butter
1 tablespoon shallot
2 tablespoons flour
2 cups chicken stock
1 cup Shamrock Farms Heavy Cream
Salt and pepper to taste
2 ounces Shamrock Farms Heavy Cream Froth

Directions:
Sweat shallots in butter, add flour and cook 1 minute. Add chicken stock and reduce by half. Add Shamrock Farms Heavy Cream and reduce by half. Blend with a handful of fresh spinach. Serve with Shamrock Farms Heavy Cream Froth on top.
