Instructions for Chicken
Combine a mixture of 50% buttermilk and 50% Shamrock Farms Traditional Eggnog. Place chicken in covered container, and fully immerse in mixture. Marinate in refrigerator for 24 hours.
Remove chicken from marinade and set out to bring to room temperature (about one hour). Discard marinade. Meanwhile, make dredge by combining 2 cups all-purpose flour and cornstarch in a large bowl. In a second bowl, create an egg wash by whisking together 2 eggs and one cup Shamrock Farms Traditional Eggnog.
Heat cooking oil (Canola, peanut, or other) to 300 degrees in a tabletop fryer (or large cast iron pan using a candy or deep fry thermometer clipped on to the side).
When chicken reaches room temperature, dredge one piece at a time by placing in flour mixture, coating thoroughly, and then tapping off excess flour mixture. Then, place chicken pieces one at a time in egg wash, coat thoroughly, and tap off excess. Dredge each piece in flour mixture a second time, and then set chicken aside.
When cooking oil has reached 300 degrees, gently place 4 to 5 pieces of prepared chicken, one at a time, in pan or fryer. Cook for approximately 12 minutes. Repeat until all chicken is cooked. (Note: The chicken can be made to this point up to one day ahead and refrigerated; bring it back to room temperature before the second fry).
Remove chicken using a slotted spoon.
Heat oil to 350 degrees. Fry chicken pieces a second time until internal temperature reaches 165 degrees (approximately 5 minutes).
Remove chicken using a slotted spoon, set aside to rest.
Instructions for Waffles
Prepare waffle batter by combining Shamrock Farms Pecan Pie Eggnog, 2 eggs, baking powder, sugar, chopped pecans, 2 cups all-purpose flour, and salt. Whisk all ingredients together until fully incorporated.
Preheat waffle maker and cook waffles according to your waffle maker’s instructions.
To serve, place chicken on top of waffles and enjoy with your favorite local honey or syrup, and hot sauce.
