Farmer's Cake

Ingredients
- 1 cup Shamrock Farms Heavy Cream
- 1 cup sugar
- 2 egg yolks
- 2 sticks of margarine
- 1/2 cup coconut
- 1/2 cup chopped walnuts
- 1 cups sugar
- 2 eggs
- 2 teaspoons baking soda
- 2 cups flour
- 1 - 20-ounce can crushed pineapple
Directions
CAKE: Preheat oven to 350 degrees. Mix 2 cups sugar, 2 eggs, 2 teaspoons baking soda, 2 cups flour and crushed pineapple. Mix by hand (do not use mixer). Pour into a greased and floured 9"x 13" cake pan. Bake at 350 degrees for 40-45 minutes or until toothpick inserted in center of cake comes out clean. Let cake cool completely before frosting.
FROSTING: Mix 1 cup sugar, Shamrock Farms Heavy Cream, 2 egg yolks and 2 stick margarine. Bring to a boil and cook over low heat for 12-15 minutes. Remove form heat and beat until thick. Add coconut and walnuts. Spread over cake.
