Hot Potato Salad

A delightfully different version of a classic potato salad featuring Shamrock Farms Sour Cream.

Ingredients

  • 1/3 cup nonfat Shamrock Farms Sour Cream
  • 2 pounds red potatoes
  • 1/4 cup diced red onion
  • 1/4 cup diced white onion
  • 1 rib celery, sliced
  • 1/2 cup diced bell pepper
  • 1/2 cup nonfat mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons minced fresh dill
  • Ground red pepper to taste
  • 1 tablespoon cider vinegar
  • Freshly ground black pepper to taste

Directions

Boil the potatoes until tender. Set aside. When cool enough to handle, cut into one-inch cubes.

In a large bowl, combine potatoes with remaining ingredients (adding red pepper according to individual taste in hotness), toss gently and chill.
