Sun-Dried Tomato Dip

Your family and friends will love this dip featuring Shamrock Farms Lowfat Cottage Cheese.

Ingredients

  • 1 1/2 cups Shamrock Farms Lowfat Cottage Cheese
  • 4 sun dried tomatoes, cut in half
  • 1/2 cup boiling water
  • 1/2 cup fat-free ricotta cheese
  • 1 tablespoon dried basil
  • 1 teaspoon onion powder
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pepper

Directions

Place tomatoes in a small bowl and cover with boiling water; let stand 5 minutes to soften. Drain and dry tomatoes. Insert metal blade into food processor bowl; feed tomatoes through chute and pulse several times, just until finely chopped. Remove tomatoes and set aside. Combine ricotta cheese and Shamrock Farms Lowfat Cottage Cheese in bowl of food processor; process 10-15 seconds, until blended smooth. Add tomatoes, basil, onion powder, lemon juice and pepper. Pulse several times, until blended smooth. Refrigerate several hours before serving. Serve with fresh vegetables or crusty Italian bread.
