Cucumbers in Sour Cream Salad
Ingredients
- 1c. Shamrock Farms Sour Cream
- 2 lrg. Cucumbers peeled and thinly sliced
- 2 lrg. Tomatoes, thinly sliced and cut in half
- 1tbsp. Onion, chopped
- 1/2tbsp. Garlic, minced
- Salt and Black Pepper to taste
- 2tsps. fresh Lemon Juice
- 1/2tsp. Sugar
- Fresh Parsley, minced
Directions
Toss cucumbers and tomatoes with salt and pepper; cover and refrigerate until well chilled {at least 12 hours}.
In a medium size bowl, combine sour cream, lemon juice, onion, garlic and sugar; mix well.
Set aside 1/2c. of dressing mixture for garnish; combine cucumbers and tomatoes with remainder of dressing mixture. Refrigerate for about 12 hours, stirring occasionally.
To serve; arrange salad on a bed of lettuce and top with a small mound of dressing mixture, then sprinkle with minced parsley.
