Spinach Quiche
Ingredients
- ¾ cup Shamrock Farms Fat Free mmmmilk
- ½ cup egg substitute
- 4 egg whites
- 15 oz. nonfat ricotta cheese
- 1 ½ tsp. onion powder
- ¼ tsp. pepper
- 3 tbsp. cornstarch
- 1 cup nonfat parmesan cheese divided
- 2 10 oz. frozen chopped spinach, thawed and drained
Directions
Preheat oven to 350 degrees. Spray 9-inch pie plate with cooking spray. Combine egg substitute, egg whites, ricotta cheese, Shamrock Farms Fat Free mmmmilk, onion powder, pepper, cornstarch, and 3/4 cup Parmesan cheese in a large bowl; using whisk or fork, blend ingredients until frothy. Fold in spinach. Spoon mixture into pie plate; sprinkle with remaining Parmesan cheese and bake 35 to 40 minutes until toothpick inserted in center comes out clean.
