Southwest Stuffed Baked Potatoes
Ingredients
- 1 bottle Shamrock Farms Sour Cream
- 1 cup Shamrock Farms Cottage Cheese
- 1/4 cup Shamrock Farms mmmmilk
- 4 baking potatoes
- 3/4 cup grated cheddar cheese
- 1/4 cup salsa - choose your personal degree of spice
- 1/2 cup bacon bits (real or imitation)
Directions
Scrub the potatoes and put into 450 degree oven. Bake until tender, 45 minutes to an hour.
Meanwhile, blend the Shamrock Farms Cottage Cheese and Shamrock Farms mmmmilk in the blender until they are smooth. Put into a bowl and stir in the cheddar and salsa.
When the potatoes are done and are cool enough to handle cut them in half lengthwise and scoop out the flesh into the bowl of cheese and salsa. Mix well.
Put shells on a baking sheet. Spoon the cheese mixture into the potato shells and return them to the oven for 15-20 minutes until they are golden brown. Top with dabs of Shamrock Farms Sour Cream and bacon bits and serve.
