Roxie’s Sour Cream Cottage Cheese Enchiladas

Ingredients

  • 1 cup Shamrock Farms Sour Cream
  • 1 1/2 cups Shamrock Farms Cottage Cheese
  • 1 can (4 ounces) chopped green chilies
  • 12 corn tortillas
  • Salt and pepper
  • 1/2 lb. shredded cheddar cheese
  • 15 ounces enchilada sauce
  • 1 lb. ground beef, browned and drained, seasoned with taco seasoning
  • Shredded lettuce, chopped onions and chopped tomatoes (if desired)

Directions

Combine Shamrock Farms Sour Cream and Shamrock Farms Cottage Cheese with salt and pepper to taste. Reserve half of sour cream mixture and spoon remainder into tortillas along with ground beef. Top each tortilla with green chilies and shredded cheese. Roll up tortillas and place seam side down in a dish.

Combine the reserved sour cream mixture with the enchilada sauce. Pour over tortillas. Bake at 350 degrees for 25 minutes.

Serve with shredded lettuce and chopped onions and tomatoes.
