Easy Cheesy Chorizo Empanadas

Ingredients

  • 1/2 c. Shamrock Farms Cottage Cheese
  • 1pkg. 16.03 oz Grands Biscuits
  • 1pkg. 4oz Beef, Pork or Soyrizo Chorizo
  • 1/2. med. diced Red Onion
  • 2 cloves of Garlic diced
  • 1/2 c. Shredded Cheddar
  • 1/2 bunch of Cilantro chopped
  • 1 lg. Egg
  • 2 Tbs. of Water
  • Salt and Pepper to taste
  • Flour

Directions

Pre-heat oven to 350° F.

Mix egg and water, set aside. Saute onion in a little vegetable oil until translucent. Add Chorizo and garlic. Sauté until chorizo is done. Drain grease from the chorizo mixture and transfer into a bowl. Let cool.

When mixture is cool, add the rest of the ingredients (except egg and water), stir up with spoon.

On floured cutting board, roll out the biscuits to a circle. Add cooled mix on one side of circle, brush egg wash on biscuit edge and fold over into a crescent. Flatten edges with a fork and egg wash tops of crescent. Place on greased baking pan

Bake at 350°F for 10 - 12 minutes until golden brown. Serve with fresh Salsa and Shamrock Farms Sour Cream!
