Easy Cheesy Chorizo Empanadas

Ingredients
- 1/2 c. Shamrock Farms Cottage Cheese
- 1pkg. 16.03 oz Grands Biscuits
- 1pkg. 4oz Beef, Pork or Soyrizo Chorizo
- 1/2. med. diced Red Onion
- 2 cloves of Garlic diced
- 1/2 c. Shredded Cheddar
- 1/2 bunch of Cilantro chopped
- 1 lg. Egg
- 2 Tbs. of Water
- Salt and Pepper to taste
- Flour
Directions
Pre-heat oven to 350° F.
Mix egg and water, set aside. Saute onion in a little vegetable oil until translucent. Add Chorizo and garlic. Sauté until chorizo is done. Drain grease from the chorizo mixture and transfer into a bowl. Let cool.
When mixture is cool, add the rest of the ingredients (except egg and water), stir up with spoon.
On floured cutting board, roll out the biscuits to a circle. Add cooled mix on one side of circle, brush egg wash on biscuit edge and fold over into a crescent. Flatten edges with a fork and egg wash tops of crescent. Place on greased baking pan
Bake at 350°F for 10 - 12 minutes until golden brown. Serve with fresh Salsa and Shamrock Farms Sour Cream!
